Ode To Adobo
No food would always remind me of home than the Adobo, I've learned that there are 1001 ways of preparing it, from the dry kind, with coconut milk, with potatoes, sweet, salty, etc., etc....
I love mine with lots of sauce and semi-sweet. My mom has her own version, simply boiling the chicken or pork in water with soy sauce and vinegar together with garlic, and voila!
Then there's this version my very good friend Ivy taught me, after cooking in soy sauce and vinegar with lots of garlic, she would fry the chicken in butter, again with garlic! Served dry, but very tasty!
And that's what we had for dinner this evening and am still savoring the after taste in my mouth as I write this!
However you prepare it, Adobo is still one of the best! Truly a Filipino creation that is one of a kind.
